From the idea to the design, from the Sanremo R&D team to the coffee experts of SWAT (Sanremo World Academy Team), the project traveled around the world several times. It was developed and implemented with the best coffee professionals in the industry. The result is the Sanremo Café Racer: the best of Sanremo technology in a robust tubular steel frame and stylish chassis, like the chassis of a legendary café-racing motorcycle. For a perfect and homogeneous extraction of the coffee aromas, it is important to be able to control the pre-infusion. Pre-infusion is the first phase of the espresso brew. Its main function is to pre-soak the coffee grounds, thus preparing them for optimal extraction. Pre-infusion also allows for a consistent flow and helps ensure the coffee grounds are completely surrounded by the grounds during infusion.

This system consists of two independent boilers: a preheater for adjusting the water temperature for the coffee, and a main boiler for producing hot water and steam, controlled by a heat exchanger to always ensure the highest thermal stability and full steam output.
